Early May is an excellent time to plant Cold Weather Crops. These include things such as Peas, Potatoes, Lettuce and Carrots.
Cool or cold weather crops germinate at very low temperatures (around 2 - 5 degrees Celsius) - so they can be planted once the ground is thawed and workable.
Some of these crops do much better in cooler weather and will ‘bolt’ once the weather turns hot (this means they grow and mature too quickly - go to seed, and become bitter and inedible) - Plants like lettuce, spinach, and radishes are included in this group.
Vegetables such as cabbage, kohlrabi, cauliflower and broccoli-like the cooler temperatures of spring, but they take much longer to grow - you can start these inside in April for transplant on May long weekend.
